Sloppy Joe Lettuce Wrap
These Sloppy Joe Lettuce Wraps are incredibly healing by the use of grass fed/pasture raised beef, romaine lettuce instead of a bun and a secret ingredient that I absolutely can't live without!
Paleo, Whole30 approved!
Serves: 8
cook time: 30 minutes
INGREDIENTS:
2 pounds ground pasture raised beef from TC Farms
1/2 a large yellow onion, chopped
3 cloves garlic, minced
1 green bell pepper, finely diced
1-2 cups Ketchup (I use Annies because there's no High fructose corn syrup in it)
5 tbsp yellow mustard
2 tbsp honey
2 tbsp apple cider vinegar
1 tsp cinnamon
1/4 tsp cayenne pepper
coconut oil for cooking
Himalayan salt to your desired taste
Pepper to taste
DIRECTIONS:
- Heat the coconut oil in a large skillet over medium heat. Add the onions with a pinch of salt and sauté for 4-5 minutes, until soft. Stir in the bell peppers and cook for another 2 minutes. Add the ground beef and cook until browned, stirring regularly.
- Stir in the ketchup, mustard, honey, cinnamon, cayenne pepper, and vinegar. Adjust salt and pepper to taste, and add more ketchup or mustard as necessary.
- Spoon into romaine lettuce for a lettuce “bun” or add on top of a bed of greens for a sloppy salad!
