Sloppy Joe Lettuce Wrap

These Sloppy Joe Lettuce Wraps are incredibly healing by the use of grass fed/pasture raised beef, romaine lettuce instead of a bun and a secret ingredient that I absolutely can't live without! 

Paleo, Whole30 approved!

Serves: 8
cook time: 30 minutes

INGREDIENTS:
2 pounds ground pasture raised beef from TC Farms
1/2 a large yellow onion, chopped
3 cloves garlic, minced
1 green bell pepper, finely diced
1-2 cups Ketchup (I use Annies because there's no High fructose corn syrup in it)
5 tbsp yellow mustard
2 tbsp honey
2 tbsp apple cider vinegar
1 tsp cinnamon
1/4 tsp cayenne pepper
coconut oil for cooking
Himalayan salt to your desired taste
Pepper to taste

DIRECTIONS: 

  1. Heat the coconut oil in a large skillet over medium heat. Add the onions with a pinch of salt and sauté for 4-5 minutes, until soft. Stir in the bell peppers and cook for another 2 minutes. Add the ground beef and cook until browned, stirring regularly.
  2. Stir in the ketchup, mustard, honey, cinnamon, cayenne pepper, and vinegar.  Adjust salt and pepper to taste, and add more ketchup or mustard as necessary. 
  3. Spoon into romaine lettuce for a lettuce “bun” or add on top of a bed of greens for a sloppy salad!
